Salted Chocolate Walnut Butter with Honey

4 cups raw walnut halves
2 tsp kosher salt (or 1 tsp sea salt)
2 tbsp dutch processed cocoa powder
1 heaping tbsp raw honey (or honey of choice)

Preheat the oven to 325 F and line a baking tray with parchment paper.
Spread out the walnuts on the baking tray and bake for 18 - 22 minutes, shuffling the walnuts around every 5 minutes or so. The walnuts will be golden in color on the inside and fragrant when done. Allow to cool for at least 5 minutes.
Add the walnuts and the kosher salt to a high speed blender or food processor. Starting on low, blend the walnuts and salt and slowly increase speed to medium, until a smooth paste forms, 3-4 minutes. Scrape down the sides of the blender and continue blending until smooth and runny, another 2-3 minutes.
Add the dutch processed cocoa powder and raw honey and blend again. The nut butter will visibility thicken due to the honey.
Once the nut butter is completely smooth and well combined, adjust to taste with more honey or cocoa powder as desired.
Pour the mixture into a jar or container, allow to cool completely, then seal and store at room temperature for up to a month, or in the fridge for up to 3 months.
