Honey Cinnamon Roasted Peanut Butter

Ingredients
16 oz raw or lightly roasted unsalted peanuts
2 tsp kosher salt
2 tsp ground cinnamon
1-2 tbsp honey
Directions
Preheat the oven to 325°F. Line a large baking tray with parchment paper.
Spread the peanuts evenly across the tray and bake for 14–24 minutes. The time will vary based on whether your peanuts are raw or pre-roasted; they are finished when they appear golden with a slight oily sheen. Avoid letting them turn dark brown, as this indicates they are over-roasted.
Allow the peanuts to cool for 5–10 minutes before placing them in a food processor or high-speed blender.
Add the kosher salt and begin blending. The mixture will transition from chunky to a thick paste; continue blending, scraping down the sides as needed, until the oils fully release and the butter is smooth and runny.
Add the ground cinnamon and honey. Blend again until fully incorporated. Note that the addition of honey will naturally thicken the consistency of the peanut butter.
Allow the peanut butter to cool completely at room temperature before transferring to an airtight glass jar. Store in the refrigerator for up to 3 months or at room temperature for 1 month.
