Chocolate Orange Buckwheat Granola

Ingredients
2 cups raw buckwheat groats
2 cups rolled oats
1 cup unsweetened coconut flakes
2 tbsp ground flax seed
¼ cup hemp hearts
¾ cup chopped walnuts
¼ cup coconut sugar
1 tbsp kosher salt (or 1 tsp table salt)
Zest of 1 naval orange
⅓ cup coconut oil
⅓ cup maple syrup
¼ cup cocoa powder
1 tbsp vanilla extract
¾ cup dark chocolate chips or chunks
Directions
Preheat the oven to 350 F. Line a baking tray with parchment paper.
In a large bowl, mix together the buckwheat, rolled oats, coconut flakes, ground flax, hemp hearts, chopped walnuts, coconut sugar, kosher salt, and the orange zest.
In a small pot or saucepan, add the coconut oil, maple syrup, and cocoa powder. Place over medium-low heat.
Stir this mixture together until everything is melted and well-combined. Turn off the heat and stir in the vanilla extract.
Pour the coconut oil mixture over the buckwheat and oat mixture and stir together until everything is well coated.
Spread the granola mixture evenly onto the baking sheet and lightly press it down (this will help form larger chunks when baked).
Bake the granola for 15 minutes, then carefully flip the granola in large chunks with a spatula. Lightly pack it down again. Continue baking for another 5 - 10 until it has slightly darkened in color, and smells fragrant.
Remove from the oven and allow to cool completely before adding the chocolate chips and breaking the granola into chunks.
Store in an airtight container at room temperature or in the fridge.
